Love shrimp and Japanese ramen? You are in luck.
Paradise Group has just opened Le Shrimp in Orchard Paragon mall, Singapore’s first ever ramen concept with la mian (Chinese hand-pulled noodles) in Japanese-style ramen shrimp broth.
The concept was born after Paradise Group’s CEO visit to Japan and his dining encounter in a Hokkaido ramen bar specialising in shrimp-based broth.
It’s not your usual kopitiam prawn noodles, in case you are wondering. According to Le Shrimp, the broth is made from hand-grinded baked fresh large prawns simmered for more than 8 hours. Conpoy are added during the process.
The result is a thick concentrated broth of shrimp goodness.

Every spoonful of the soup was divine, full of ‘wok hei’ – till I could visualize the amount of prawn shells, prawn roe and prawn heads that had been fried and crushed to extract all the juices and crustacean flavours into a concentrated gravy which formed the base of the superior prawn stock. The umami broth complemented the ramen perfectly, though I think the flat rice noodles which should absorb more of the broth would taste even more scrumptious. I chose ebiko prawn ramen soup topped with shelled prawns with ebiko (S$13.90). The prawns were very fresh and the roe was a beautiful pastel orange colour, with zero hint of fishy smell and no fishy aftertaste.

In celebration of Le Shrimp’s opening, Paradise Group will be offering 1-for-1 on noodle dishes all-day from 7 – 9 December (Friday to Sunday) this week.
Le Shrimp opens from 10.30am to 10pm daily.
